What is the best way to WIRELESSLY transfer files from/to the computer and Android 8.1.0 smartwatch? I mean for devices with small square displays of ~139 mm.

The smartwatch has Bluetooth, Wifi and SIM card with mobile phone data.

Use something like FX Explorer.
It has a BT Explorer built in which might work.

FX File Explorer (NextApp)

or
Solid Explorer File Manager (NeatBytes)

If they both work, then they will be likely the same.
Personally I use FX.

I just got an Android 8.1 watch and want to transfer files from my desktop computer. But my computer doesn’t have bluetooth. Should I buy a bluetooth USB adapter to plug into the computer? And then install FX Explorer on my watch, and then I may be able to transfer files from my desktop computer to my watch? Is this the best approach?

Yes you can. For me i use Gdrive for transfers with rar
