Watch reboots and updates all the apps. Well, no differences even if Settings / Info it says 2018.02.06... So, I noticed that TWRP recovery has been overwritter and in the Internal Memory there's no ZIP or other file related to this update, so no way to keep it.
After updating, the watch has restarted to disconnect BT randomly every 1 / 2 minutes
Tested with :
Watch Droid Phone => BT disconnection
WiiWear => BT disconnection
WiiWatch => impossible to connect, as in previous firmware
Tomorrow I’ll go back to July 2017 firmware
EDIT : this evening @ 10 PM … maybe … I’ve found a solution without needing to revert back to old firmware versions !!!

The Blutooth disconnects with Watch Droid Phone is fixable…turn your wifi on when you have your blutooth on then connect…you dont need to connect to a wifi network, just have it running in the background. From then on it wont disconnect from Watch Droid Phone.

Watch Droid got update on phone app and assistant. It works so much better than before, i tried it and i got no single disconnect. I was on bluetooth on watch all the time, wifi was off.
